OUR SMOKING PROCESS

If our salmon smoking process is surprising, applied to cod makes it one of our star products. At Reyes Varón, lovers of this species, we have put all our knowledge and expertise to achieve a product of exceptional juiciness and finesse.

THE ORIGIN

Our cod comes from fishing in the open sea in the extreme Icelandic waters. It is the Gadus Morhua variety (or commercially known as Atlantic Cod). Its main characteristic is its large size and its appreciated white and juicy meat. Thanks to the MSC certification we can guarantee that our cod have been caught in a sustainable way in the open sea.

THE ELABORATION

Our long history in treating this species has led us to select the best boats and fishing areas that guarantee us freezing on board without adding water or glaze, a process that guarantees its white color and the preservation of all its properties. Once at the Reyes Varón facilities, a shorter and smoother curing and smoking process is carried out to achieve that juicy and light product for which we are renowned. Our cold friction technique with whole blocks of noble wood, developed exclusively by our master smokers, allows us to respect all the texture and fibrousness of our Gadus Morhua, obtaining the juiciest and most balanced product on the market.
